BabyCakes NYC Inspires: Gluten Free & Vegan Blackberry Peach Cobbler

I love cobbler.  LOVE it.  I love fruit desserts more than chocolate (don't shoot!!).  I would pick a dutch apple pie or my momma's apple crisp over a chocolate cake any day.  So when Best Friend gave me the BabyCakes NYC cookbook for my birthday last year, I just about lost my marbles in excitement when I saw a cobbler recipe.

For those of you that don't know, I'm gluten intolerant.  This means that I can't have any wheat-based products or anything containing gluten (a protein found in wheat, barley, and rye).  It's a little hard to enjoy a delicious cobbler or crisp when I get super sick from eating it.  Even more recently, I've been told to cut out eggs and dairy for awhile, too.  So not only does my dessert have to be gluten free, but it also has to be vegan.  Great.  There goes my tastebuds.

Enter BabyCakes.  My favorite bakery in the whole entire world.  Since I don't live in NY, DC, or LA, I thank God that a cookbook was created so that I could make their delicious treats whenever I want.  Seriously, even if you don't have a food allergy, go see them.  Their treats are unbe-freaking-lieveable!

I made this cobbler when I found some perfectly ripe blackberries at the store.  If I was still living in Washington, I would have picked them right outside my front door.  But since I now call San Jose my home, I have to settle for paying $4 for a tiny tub of blackberries.

If you have a free afternoon and some fruit that needs to be used, make this.  I promise you won't be disappointed.  Use almost any fruit you'd like.  I stuck with the blackberry peach, but you can use cherries, strawberries, apples, or apricots.  Top it with coconut milk ice cream (or real ice cream if you are allowed).  It's the perfect summer dessert . . . or breakfast.

I'm VERY impressed! I'm all about the vegan baking, but gluten free is a whole other chemical process -- mixing flours and binding with xanthan gum, that stuff is intimidating! Well done!! :)
